Clover and Heather Honey
Erland Omand keeps two sets of hives. The first are up a heathery hill in the middle of the mainland near the Happy Valley and the Ring of Brodgar and the bees produce thick granuley honey perfect spread thickly on toast. The other hives are to the west of the mainland in Birsay where the bees feast on wild clover and produce a golden runny honey which is so moreish Rose often eats it straight from the jar.
