Organic salmon gravadlax
Same as the organic smoked salmon only this time the happy, clean, fit fish are cured in a brine (sugar, vinegar, salt and dill) then frozen. Gravad means buried in ice in Norwegian and Lax means salmon. This way of preserving fish is common throughout Finland, Scandinavia and Denmark. And seeing as Orkney belonged to Norway up until 500 years ago, it’s no surprise that Orcadians do it best of all.
