Organic smoked salmon
Our organic salmon is farmed in the wild seas off Westray (one of Orkney’s most northerly islands) and then cold smoked over oak in Jolly’s traditional kiln. Fish farming has developed a shonky reputation over the last few decades, and largely, rightly so. However… Robbie Rendall’s organic salmon farm off Westray is unlike any other. Every morning Robbie or his brother (or employees, let’s be honest) hand feed the salmon in the low-density nets anchored far out to sea. Orkney is blessed with extremely tidal waters, it’s where the North Sea meets the Atlantic. Good for fish farming, bad for ferry crossings. The tides ensure that the seawater the fish are reared in is the cleanest possible (far cleaner than some rivers where wild salmon are caught). The result: happy, clean, very fit and lean salmon, ready to be harvested and smoked for your delectation (poor salmon).
