Orkney Fine Foods
Based in the Old Smoke House on the outskirts of Stromness, Orkney Fine Foods is busy turning Magnus’s sea trout into a smoked sea trout pâté, or hot-curing local salmon with dill seed or cracked pepper. Owned by Karl Adamson and run with the help of Neil and Magnus, the company has created a range of delicacies including a local favourite made from one of Orkney’s more unusual crops. Seaweed is low in cholesterol and a good source of pantothenic acid, magnesium, potassium, thiamin, riboflavin, niacin, iron, copper and manganese. It is also high in protein. It has not, however, enjoyed a reputation as the most appetising raw vegetable – that is, until it fell into the hands of Orkney Fine Foods. Two of their most-loved products are the smoked salmon and kelp pâté and the chilli seaweed dip. And yes, they go very well served on one of Esther’s oatcakes.
