Orkney Cheese Company
The Orkney Cheese Company is majority-owned by the farmers’ co-operative, Orkney Milk Ltd, which takes milk from all of Orkney’s dairy farms – 23 in all. The supply of milk varies according to season because all of the dairy farms are also calving farms. There is a dip in supply in February until June until the calves are put out to grass (they need the milk more than the cheese eaters). Orkney Cheese then turns the creamy milk into award-winning cheddar which is packaged in hand-dipped waxed triangles.
