If you come to Borough Market on a Friday or Saturday and you will see our stall piled high with smoked fish. Beautiful organic smoked salmon, plain and peppered mackerel, acclaimed smoked kippers and un-dyed smoked haddock - all of which are supplied to us by Jolly’s Fish and Farm Produce in Kirkwall in Orkney.

Our relationship with Jolly’s forms an integral part of our business – both retail and wholesale.

All Jolly’s fish is sourced directly from local producers. This guarantees the ultimate level of freshness and quality as well as promising seasonality and sustainability.

But what lies at the crux of the fish side of their business and what sets them apart from other fishmongers is their unique kiln and the traditional techniques they employ. Salmon is traditionally brined using salt and sugar then cold smoked over oak wood fire before being sliced by hand, not machine. Mackerel is filleted and then cold smoked for 6-8 hours while Kippers are cured and then left to hang for up to 7 hours.

Jolly’s also provide us with their own organically farmed beef, lamb and pork. Their passion for organic farming and their dedication to animal welfare is clear in the superior quality of the meat they produce. Their animals are allowed to grow at their own pace, not force fed to achieve quick sales and unlike conventional farms their animals are grass fed, grazing on their organic pastures in the summer months and home grown organic grass silage in the winter.
